I can't believe it is the end of October already! Fall is in full swing and the frosty northeast mornings are proof! Plum season is just about over and it's time to add a new salad to the menu. I love sweet potatoes and while their season is also at its end, they can be harvested and stored well into the winter.
I wanted to add a fall salad that had a little whimsy and a lot of flavor, so I looked to my orange, antioxidant filled friend the sweet potato! I played around with some holiday favorite ingredients and put my spin on succotash -
Debuting last week, Sweet Mamma Succotash has been a hit! It is a cold sweet potato succotash, tossed with chick peas, a little red onion and raw unsalted pumpkin seeds dressed with a cumin curry dressing and topped with chevre. . .
It is always fun to create a new dish - and it is just as much fun to come up with the names! So come on in and have a bite!
